Coffee tastes off in a tumbler because residual oils and tannins accumulate on the interior surface over weeks of use. The metal isn't reacting with your coffee. The surface is just holding onto traces of previous brews, and each new cup starts on top of that layer. I spent a fair amount of time in finance before this, which means I have an occupational habit of tracing the actual cause of a problem rather than the most obvious-sounding one. Coffee leaves behind two main residue types that most people don't fully wash out in a daily rinse:
Coffee oils. These are present in every cup, whether you're drinking espresso, pour-over, or cold brew. They're what gives specialty coffee its body and mouthfeel, and they're also slightly viscous — they cling to surfaces rather than running off cleanly with water. Tannins. These are phenolic compounds found in coffee, tea, and most plant-based drinks. They bind to surfaces, which is why they stain mugs and teapots. In a tumbler, that binding happens on the interior wall with every use.
Neither of these is the steel reacting. They're compounds from the coffee itself that the interior surface is retaining.
A quick daily rinse removes a lot, but not everything. Some oil and tannin stays behind each time, and the next brew adds another thin layer on top of it. If the taste has already shifted, a vinegar soak is the fastest reset. Baking soda dissolved in warm water works as an alternative if you'd rather skip the vinegar smell.
Going forward, a proper wash with dish soap after every use — not just a rinse — prevents the accumulation from getting to the point where you notice it. It's a two-minute habit that mostly eliminates the problem.
