We sell ceramic-lined bottles, so this is an awkward thing for me to write.
Coffee beans are somewhere around 10 to 15 percent lipids. Those oils coat the inside of whatever you brew into, and rinsing with water does not remove them because water and oil do not mix. Left there, they oxidise and turn sharp and stale. For a lot of people that is a bigger part of the problem than the steel is. The lid is usually worse than the bottle. Interior material affects how easily residue comes off, not whether it arrives.
Our product pages say your coffee never touches bare metal. That is true, and it is a real difference. But I have spent enough time reading customer messages to know that when someone writes in about a metallic taste, the cause often turns out to be residue and cleaning habits rather than the steel, and pretending otherwise would be bad for them and eventually bad for us.
So here is the version I would give a friend.
Roughly 10 to 15 percent of a coffee bean is lipids, varying with species and processing. Brewing extracts a share of those oils along with everything else you want, and they end up in your cup, on your filter basket, and on the walls of whatever you poured them into. Dark roasts carry more of it because roasting drives oils out toward the surface of the bean, which is why very dark beans look shiny in the bag.
Brew method changes the amount considerably. A paper filter traps a large proportion of the oils, which is part of why filter coffee tastes cleaner and thinner than the same beans through a French press. Metal filters, French press, espresso — those send far more lipid content into the cup, and from there onto every surface it meets.
Fat does not sit there unchanged. It oxidises. The same process that turns butter and nuts rancid works on the film inside your travel mug, and the flavour it produces is sharp, flat, faintly acrid. Descriptions vary. People say stale, ashy, bitter, chemical. A lot of people say metallic, because that is the closest available word for a taste that is unpleasant in a mineral sort of way and does not resemble coffee.
Then the next brew passes through that layer on its way to your mouth.

This is the part that took me longest to accept, because I rinse things and they look clean and my brain files that as done.
Water on its own does not lift oil. It removes the colour, and it removes the coffee that was still liquid, and it leaves behind a film you cannot see and mostly cannot feel. The mug looks fine. Tomorrow you add a fresh layer on top of yesterday's, which is now a day further into oxidising.
I studied finance before any of this, and the shape of it is familiar. A balance you never pay down does not stay the same size. It compounds, quietly, until one morning the number is large enough that you finally look at it. Nobody notices their mug going bad. They notice that it has gone bad.
If your coffee tastes wrong and the inside of the bottle looks clean, stop looking at the bottle.
A bottle body is a smooth open cylinder. You can get a brush into every part of it, water reaches everything, and it dries because air moves through it. A lid is the opposite of all of that. There are threads that trap liquid in the grooves, a silicone gasket seated in a channel that stays wet for hours, a drinking spout with an internal path you cannot see into, and on many designs a sliding or flipping mechanism with moving parts that were never meant to come apart.
Every one of those is a place where coffee oil sits in the dark staying warm and damp. And because the lid is the last thing between the drink and your mouth, whatever is in there arrives with every sip.
Take the gasket out. Most of them lift out with a fingernail. What is underneath it, the first time, is usually enough to change how you feel about the whole subject.
Detergent, because it is designed for exactly this — one end of the molecule holds onto oil, the other holds onto water, and the oil leaves with the rinse. Warm water and dish soap the same day handles ordinary use.
For buildup that has been accumulating for months, baking soda paste, fifteen minutes, then scrub. It is mildly abrasive and mildly alkaline, and it deals with a surprising amount — though for oil that has been polymerising on there for a year, a proper detergent soak does more. Vinegar is popular online but it targets mineral scale rather than oil, so if your problem is limescale it helps and if your problem is coffee film it mostly does not.
The single highest-return habit is unglamorous: rinse it out when you finish, not when you get home. Oil that has not yet dried and oxidised comes away with plain water. Give it eight hours in a sealed warm bottle and you are into detergent territory. I fail at this maybe twice a week, which is the honest reason I know how much difference it makes.
One thing to skip: leaving a splash of coffee in the bottle "so it does not dry out." It does not preserve anything. It gives the oils a warm liquid environment to sit in for hours, which is the condition you are trying to avoid.
Which brings me to the part where I have an interest to declare.
Coffee oil deposits on every surface. Glass, steel, plastic, ceramic. No interior prevents it, and any drinkware company telling you otherwise is describing a product that does not exist.
What does differ is how readily it comes back off. Our bottles use a rare earth ceramic coating applied to the inner wall and fired at high temperature, and some customers tell us residue rinses away more easily than it did from the bare steel bottles they were using before. That is a pattern in what people tell us rather than a laboratory result, and I would rather label it accurately than inflate it.
The other difference is more straightforward. If you drink black coffee or light roasts, some people do genuinely taste the steel, and a ceramic interior removes that variable so you can work out whether it was ever the issue. Whether that was ever your issue is worth establishing before you spend anything.
None of which changes the lid. Ours has a silicone gasket like everyone else's, it collects residue like everyone else's, and it needs taking apart like everyone else's. There is no interior coating that solves a maintenance problem.
Where it does become worth thinking about is narrower than our marketing would like. If you already wash the thing properly, already take the lid apart, and still get a taste you cannot place — that is the point at which the surface your coffee sits against stops being a detail. Below that threshold, a better cleaning habit will outperform a better bottle every time, and I would rather you tried the free version first.

Before you replace anything, take the gasket out of the lid and look at what is under it. For most people that settles the question, and the fix costs the price of dish soap.
If it is already clean under there and the taste is still wrong, then you have ruled out the cheap explanation, and what the coffee is sitting against becomes the next thing to look at.
